1 tablespoon of lemon or orange juice
1 teaspoon of lemon or orange zest
For the Vegan Chocolate Coating:
1/4 cup / 60 ml vegan dark chocolate, melted
1/2 teaspoon coconut oil
For the Toppings:
4 pistachios, finely grated
1 tablespoon shredded coconut or other dried fruit
A handful of edible rose petals (optional but perfect for Valentine’s touch)
Directions:
Prepare the Stuffing:
Combine the gluten free ingredients, chopped cashews, walnuts, almonds, orange jam or fruit preserve, salt, cinnamon, cardamom powder, crushed fennel seeds, lemon or orange juice, and zest in a mixing bowl. Mix thoroughly and set aside.
Stuff the Dates:
Make a slit down the center of each date. Carefully open them up and remove any pits.
Fill each date with a generous nut and spice stuffing.
Freeze the Stuffed Dates:
